A good day for Asparagus Soup.

I got a soup maker for Christmas from the delightful offspring and have had much fun with it! Today I made Asparagus Soup. YUM!
Here's the recipe:
1 pound asparagus
2 t canola oil
1 med onion, chopped
1 med potato, cubed
3 C vegetable broth, low-sodium
1/4 t pepper (called for white, but I only had black)
1/2 t ground savory (didn't have it - used coriander)
1 C 2% milk
1/4 C snipped fresh parsley
Put it all in the Soup Maker except the milk and turned it on. Added the milk after it had run through all the cycles. I decided to garnish mine with bacon crumbles and a blanched asparagus top. It was delish and a very pretty spring green. Enjoy!

  2. Oh Cae! I love my soup maker!! Not anything like a crock pot tho. It actually cooks, then blends, then cooks some more, then blends some more... until you have delicious cream soup.
